friday night lite

Got home fairly late, and wasn’t in the mood to make anything, But a nice, easy, and dare I say, casually elegant dinner was minutes away. I had totally forgotten how to prepare the rice paper wraps, so I heated up some water in a skillet (and blanched some matchsticked carrots while I was at it). Meanwhile I tore up some lettuce, and sliced some leftover chicken.

Turned the water down to low, and cooked?… hydrated? (well, softened really) the “gallettes du riz” one at a time. Lost the first two due to breakage, but got the hang of it pretty quickly (a spatula worked much better than tongs or chopsticks). Chicken, lettuce and carrots topped with some fresh micro-greens, with some Garlic-peanut sauce to dip. (Stonewall Farms, but could have whipped something up in vita-mix just as quick. Would have cubed some tofu and put the sauce inside if we didn’t have the chicken ready. Interested to try a sushi-like version next time. Like combining the sushi and side salad from our favorite lunch spot.

What a great summer spin on salad – faster than a pizza (frozen or delivery). Not to mention a good “I’m sorry” to myself for my pretzel and frappucino lunch.*

(Yes, bread, cheese, mustard, coffee and chocolate is really good together)
